I rechecked and found an issue in the Mac App Store version.
Simple email a screenshot from the Mac App Store app from the tab purchased items which shows GraphicConverter 12 to support@lemkesoft.de
I will issue a license for the version outside the Mac App Store which fixes the issue.

Thanks for the sample files.
The JPEGs have three channels. But all channels contain have the exact same content. So, the image was converted to grayscale in your other app during processing.
So, that can’t be undone.
You can only use the colorize command inside GraphicConverter. But that will not ...

The .acorn file format is proprietary and not publicly documented. Because of this, GraphicConverter can only display the embedded preview via the Acorn preview service. This is shown in the information window, too.
