The problem persists even in a new GC document and using the text tool. I did a screen grab movie to show this:

This has nothing to do with copying text from somewhere else, the text is created right within GC itself.

It's easy to reproduce:
1) Open GC and start a new blank sheet
2) Click "A" text tool and click somewhere on sheet
3) Type a sentence -- text will be wrapped in a narrow column
4) Try to drag handles on text box ... text stays in a narrow column
Another hypothesis: someone previously built a table with GraphicConverter; if the preferences are set in a certain way, the text tool could be carrying the "hidden format" for any new window.

I find 3 rows in that field; put the Rows to zero, then
Preferences > General > Display Windows > When Opening a New Window Retain Last: [Settings].
In case, deselect and try again.
