Custom Metadata & View IPTC Data

Is it possible to create custom IPTC data fields?
We have an old iView catalog that contains several custom metadata fields, such as the name of the event, the client, the end client, etc... I'd like to preserve all this detail and keep it associated with our photo collections when working in Graphic Converter. Am I limited to the IPTC fields available, or can I create custom data fields in Graphic Converter?
Follow up question. When in Browse and I select Window->IPTC Data, the IPTC Data window opens as a floating side-bar, but the contents are only viewable when I mouse over an image. Otherwise, the IPTC Data window is blank. Is this the intended behavior, or I'm doing something incorrectly here?
